A tasty and gorgeously festive desert for your holiday dinners!
8-12 mini pavlovas
Hokey Pokey Ice Cream
Assorted berries and chopped fruit
Christmas Spices, Nutmeg & Cinnamon
Caramel Sauce Ingredients:
1 cup of brown sugar
4 tbsp of salted butter
1/2 cup half and half (or use equal parts heavy cream & milk)
1 tbsp vanilla extract
Arrange the mini pavlovas in a circle on a large circular serving plate, leaving some space in between each (that's where the ice cream scoops will go!
Prepare the Caramel sauce:
Combine all ingredients in a saucepan and simmer over low heat, whisking constantly or until thickened and no longer watery (6-9 minutes). Keep in mind it thickens more as it cools.
Put a scoop of Hokey Pokey ice cream between each pavlova, keeping the circular 'wreath' shape going. Add whipped cream to the tops of each mini pavlova.
Scatter fruit all around the outer edge of the plate. Drizzle with caramel sauce. Dust with Christmas spices. Serve immediately, and enjoy!
